Ingredients: Serves 2
⁃ 4 Heritage Happy Eggs
⁃ 1/2 cup cheese
⁃ 4 slices of bacon or preferred breakfast meat
⁃ 2 hash brown patties
⁃ 2 large 10 inch tortillas
⁃ 1 whole avocado
⁃ Salt & pepper to taste
1. Cook Bacon or preferred breakfast meat in a pan until done. Remove & set aside.
2. Heat up a medium pan on high & add oil. Take a hash brown & using a ring mold, cut a hole in the center. Place the hash brown in the heated pan with oil. Cook for 2 mins flip on the other side until crisp. Crack 1 egg with an additional yolk in the center and cook for 2 mins. Remove from pan.
3. Heat up a small nonstick pan to medium heat and add 1/4 cup shredded cheese until bubbly for 3 mins. Flip until the other side is crispy. Remove from pan and set aside.
4. Slice an avocado and set aside.
5. Place a large tortilla on a cutting board or work surface. Start assembling the Crunchwrap by placing the hash brown on the center of the tortilla, shred cheese on top, and cooked bacon.
6. Add the avocado on top & place crispy cheese on top of the avocado.
7. Place a small pan on the stove & heat to low/medium heat.
8. While the pan is heating, fold your wrap.
9. Start folding one edge of the tortilla towards the center of the ingredients. Hold in place and continue to fold the edges to form pleats- which seal into a circle.
10. Carefully pick up the crunchwrap & place seam side down on the heated pan.
11. Cook 1 to 2 minutes, or until lightly browned, flip and cook an additional minute.
12. Serve immediately. Enjoy!
