Ingredients:
- 1 tablespoon dried oregano
- 1/3 cup tomato paste
- 2 cups Anellini or other small pasta
- kosher salt and black pepper
- 1/2 onion minced
- 1/4 tsp chili flakes (optional)
- 1/2 teaspoon paprika
- 1 cup grated parmesan cheese
- 1/2 cup grated pecorino cheese
- 1/2 cup fresh basil
- 3 cups water or chicken stock
- 1 cup tomato sauce
Instructions:
1. Heat together the butter, olive oil, garlic, and onions until caramelized. Add oregano, and chili flakes in a large pot over medium heat. About 10 minutes
2. Reduce the heat to low, stir in the tomato paste. Cook 1-2 minutes, then pour over 3 cups of water and 1 cup of tomato sauce. Bring to a boil over medium heat. Add the pasta, paprika, and a handful of basil. Season with salt and pepper. Cook, stirring often, until the pasta is al dente, about 15 minutes.
3. Stir in the parmesan, pecorino, and basil until the cheese is melted.
4. Serve with more parmesan cheese and fresh basil.
